Well this Stout, Pumpkin and Mushroom Risotto. may only be a legend in my mind but I wanted to tie this post in with Halloween. Besides, I might be feeling a tad big pumpkin headed today.
So why re-visit this recipe today? Here are my reasons in chronological order, not necessarily order of importance.
1) I would rather taste this savory, earthy and creamy Stout, Pumpkin and Mushroom Risotto for Halloween than read the Legend of Sleeping Hollow! I told you I have a big head not no-head!
2) You may have more PUMPKIN tomorrow then you know what to do with!
3) KCTS Cooks on the Side premieres Saturday November 3rd. Although it lacked the star power to be on the air, the Stout, Pumpkin and Mushroom Risotto recipe is being featured in cook book and DVD. Sure you can get the recipe for free here but contribute to the community and KCTS by buying the book or DVD to get an assortment of tasty side dish recipes.
4) International Stout Day is only a week away, November 8, 2012. We had great stout and feast celebrating International Stout Day last year. What will you eat and drink next Thursday?
Jack o Lantern pumpkins are too watery for the risotto.
