How excited is Lake City to have a brew pub? If the line snaking out to the parking lot for the Elliott Bay Brew Pub sneak peak was a clue, you would guess that they are pretty excited! The second annual Washington Brewery Open House was February 25, 2012 and Elliott Bay Brewing opened up the loading dock doors for a glimpse and a taste.
With plans to officially open in late March, the brewpub is definitely a work in progress. In the restaurant space, the new paint smell is almost over powering, as workers are getting ready to lay the flooring. It is a bustle of activity but it is the bright, shiny, new bright tanks that capture my attention.
Last Thursday, they brewed the first batch of Demolition Ale in the new Lake City brewery. Friday, they brewed a new recipe, which will become one of the house brews: Lake City IPA. Bill Jenkins, Lead Brewer at the Lake City branch describes the Lake City IPA as:
This is a new recipe, based on the IPA I brewed at Big Time. It is full of those great “C” hops that we love. I bittered it with Chinook and finished it with Cascade and Centennial hops. I am using American pale yeast to create a really drinkable session IPA. The alcohol will be in the 5.5 range so you can hang out at the brew pub and easily enjoy 3-4 of these beers.
The Lake City IPA will be ready in about 4 weeks, so I am expecting it on tap when it the brewpub opens for business.
In addition to brewing the house beers, Bill and his team will be brewing your other favorite Elliot Bay beers to help keep up with the demand city wide. Expect Lake City to be smelling REALLY good on Tuesday and Thursdays as Bill plans for those to be the brewing days.
For the open house, Elliot Bay Brewery was pouring three beers at the Lake City location:
- Galactic Cascade on cask
- Organic Coffee Stout
- Brandy Barrel aged Imperial White
INn addition to the beer, there was nuts, fruit and lots of photo opportunities of the new brewery. It was great to see the community support of not only Lake City beer lovers but Elliot Bay beer lovers came from across the city to help celebrate.

The new brewery and restaurant is unassuming from the street but the back of the building boasts the main entrance, architectural interest and free parking. Anticipated opening is late March.
