First brewed in 2012, Elysian Brewing’s Savant IPA has returned after a five year hiatus. Available now through April 2017, the Savant IPA really knows how to make Nelson Sauvin Hops a star.
The Elysian Brewing Savant IPA is a rich orange amber. Although not heavily aromatic, the nose is definitely tropical and citrus. The New Zealand Nelson Sauvin Hops is unique, in that is often referred to giving off white wine aromas. It is certainly true in this beer!
The malt sweetness is just the briefest of flashes. The hop flavors match the nose, with lots of citrus, some passion fruit and hints of papaya that start mid-palate with the bitterness starting there as well. The finish isn’t overly long and Ed and both appreciated it. Or I should say the bitterness wasn’t overly long, the beer lingered but it was more citrus than strong hops. Some IPAs can overstay their welcome but not this one. It was a nice medium bodied IPA that stood up well to the snowy afternoon that we tasted it even if the tropical flavors took us away to a beach in Mexico.
We paired this with a Dungeness crab salad over winter greens and a green curry vinaigrette. The crab complemented the tropical and citrus flavors nicely. While curries don’t always play nice with IPAs, this was a mild vinaigrette dressing and they actually paired quite nicely.
