In celebration of Diamond Knot Brewery‘s 15th Anniversary, they tapped four aged kegs of their Ho!Ho! 2005, 2006, 2007, 2008. According to Dan, one of the beer makers here at Diamond Knot, their Winter Ho! Ho! is a dark style ale with high (8-9%) alcohol content.
In general, the Diamond Knot Industrial Ho! Ho! is a high octane brown ale packed with lots of malty goodness! Definite differences did exist between the various vintages.
- 2008 Ho! Ho! is the crispest tasting of the lot. Bitter hops add a bite and keep the malt sugar in check.
- 2007 Ho! Ho! is silky smooth. You can feel and taste how the aging has added complexity and really blended the flavors in this ale.
- 2006 Ho! Ho! This was our least favorite. The carbonation felt funny on the sides of the mouth and here the malty sweetness crossed into the cloying stage.
- 2005 Ho! Ho! is our hands down favorite. This is subtle, yet complex. The complexity is reminiscent of an aged wine. It is almost brandy-like. Slightly sweet, velvety smooth but then the hops remind you that this is a beer!
Those were our favorites, but other patrons at the brewpub had a different favorites. Some patrons preferred the crispness and distinct flavors present in the 2008 Ho! Ho! One person liked the 2007 Ho! Ho! best. The Diamond Knot brewmasters are especially proud of the 2005 Ho! Ho! as a testament to their passion and dedication to crafting their beers and maintaining rigorous sanitation standards.
